I had no idea beans and veggies could be so dang delicious on a pizza. First let me just say that the Southwest Bean Salad from Paisley Farm is ridiculously good and can be eaten straight out of the jar. With that being said, I wanted to create a recipe that would really showcase the flavor of the beans and veggies so I figured……hmmmm how about on top of a pizza. Think about the flavors of Canadian bacon and pineapple except replace the Canadian bacon with grilled chicken and the pineapple with the Southwest Bean Salad. It give just the right amount of tang and is a super healthy meal.
