I love meat! And I love creating tasty mashes to go with meat. First things first, go grab a nice piece of steak. Pictured below is a New York Strip that I cooked to a medium rare on a indoor grill pan.

So, I’ve been playing around with different flavors of Paisley Farm jarred veggies and figured why not make a mash out of the sweet cauliflower. Cauliflower mash is such a healthy alternative to mash potatoes and the outcome using the jarred sweet cauliflower was a buttery semi tart mash that paired extremely well with my steak. It has a sweet relish flavor but not overpowering in any way. Plus you can always add more butter or more milk or even fresh herbs. But the sweet cauliflower is definitely a good base to play around with. Now for my spinach salad, I decided to top it off with a bit of evoo/vinegar, a few pecans and Paisley Farm sweet pickled beets. I’ve never been a huge fan of beets but the guys at PF have done something amazing because these beets are delicious and not too earthy. Enjoy!

Sweet Cauliflower Mash

Ingredients
  

  • 1 cup Paisley Farm Sweet Cauliflower
  • 2 tbsp butter
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/2 tsp pepper

Method
 

  1. Put Sweet Cauliflower into a sauce pan and on the stove over medium heat
  2. Add the butter and let it melt. Add salt and pepper and then the milk
  3. Use an immersion blender to puree the mix
