I love traditional coconut paletas. I wanted to take a traditional Mexican coconut paleta’s recipe and see what happens if I switched out a few ingredients without compromising the flavor. OMG! I Asianified it and the result is a super delicious, creamy, spicy popsicle. They turned green because of the pandan but if you use a clear pandan you’ll eliminate the green color. For Asians, if it’s green it’s pretty common that is has pandan as one of the ingredients. Pandan is to Asians, what vanilla is to western folks. Look how pretty they turned out.

Drop in the chopped up coconut candy. They may sink to the bottom so reserve some in case you want to put on top of the mix after you fill up your popsicle molds.

I added more cayenne. I’ve been going crazy with cayenne pepper lately but it adds such great heat.

In the freezer they go. The longer they freeze the better. 5+ hours. If you can make them a day ahead of time that would be ideal. #yummy
